★ Event Overview: Do you think sushi is just rice and raw fish? Did you know that "Edomae Sushi," the predecessor of Nigiri Sushi, is actually a gustatory universe full of aesthetics and philosophy?
This lecture invites popular food critic and author of A Century of Washoku, 李迺澔 (Teacher Bian-Shen), to take us on a journey from the sushi carts of the Edo period to modern sushi restaurants. From the ingredients themselves to the final product, we will not only discuss the history of sushi but also deconstruct every step of sushi making from a metaphysical perspective.
Whether you are a foodie, a lover of Japanese cuisine, or simply interested in the study of food culture, you are welcome to join this speculative journey of taste!
★ Speaker Introduction: Nai-Hao Li holds a Ph.D. in English and American Literature from National Taiwan Normal University, focusing on American Renaissance literature and contemporary Continental philosophy. He is currently an Adjunct Assistant Professor at the General Education Center of National Taiwan University of Arts and the Language Center of Chinese Culture University, as well as a columnist for platforms such as The News Lens.
Under the pen name "Teacher Bian-Shen," he writes The Art of War in Food: Teacher Bian-Shen's Culinary Research on Facebook and Pixnet. Through the lens of cultural studies, he explores cooking methods, dining etiquette, and the historical and cultural significance behind ingredients and dishes.
He is the author of several books, including A Century of Dining Tables, A Century of Washoku: Teacher Bian-Shen's Japanese Cuisine Research Room, and A Record of Seeking Food: Teacher Bian-Shen's Transcendent Taiwanese Cuisine.
